Snooping around cornfields at this time of year, one finds smut that infects the lower portions of half-grown cornstalks, down near the foot of the plant. Taking a knife, I've noticed that the fungus Ustilago maydis (a basidiomycete) appears to be able to transport itself systemically in the vascular bundles of the corn plant, upward. Generally it kills the corn plant, or at least renders the plant useless for grain production.
It is a true predatory and parasitic fungus.
It is also considered a delicacy that is reportedly esteemed in Mexico, despite its Aztec moniker, 'huitlachoche' that refers to crow shit.
In a few weeks, smut will be infecting young corn ears and cobs. That's when it reaches its maximum size. So far, because of the moist weather, the 2009 smut crop is progressing well.
